Avocado and Tomato Salad with Lime & Cilantro

(you can use any herb you like really) Last night we used a little mint from the garden, it’s also great with basil


Preparation:

Wash and slice the cherry tomatoes in half. This makes them easier to eat, but it also allows the juices to incorporate in the dressing. Slice 2 of the small avocados in half, gently remove the pit, and cut into pieces about the size of the cherry tomatoes. Tear or chop a bit of cilantro or whatever herb you are using, and toss that in.  Sprinkle with a good salt, drizzle a small amount of extra virgin olive oil, and then squeeze the juice of one lime. Crack some black pepper in there as well if you like. Gently toss to distribute the flavors. Let it sit for 10 or 15 minutes before eating. It is also really good with cucumber in the salad as well. But if you use it, make sure to take the seeds 1st with a spoon.
